Besan paratha with boondi Raita

Ingredients

For besan paratha

2cup Aata
1cup besan
Salt to taste
Onion 1 finely chopped
Hing a pinch
Red chilli powder 1/4tsp
Amchur 1/4tsp
Cumin seeds 1/2 tsp
Green chilli paste 1tsp
Ginger garlic paste 1tsp
Oil 4-5tbsp
Coriander leaves 1tbsp
Water as needed to make aata dough

For boondi Raita:
1/2cup plain salted boondi
1 cup curd
1/2tsp cumin powder
1/2tsp dry pudina powder
1/4tsp black salt
3-4tsp sugar powdered
Salt to taste
Red chilli powder 1/4tsp 

Method

For besan paratha:

In a mixing bowl add aata,salt,2tbsp oil and add water in small portions and knead a soft dough.cover and keep aside.

Then in a kada heat oil,add cumin seeds,hing,onion.saute till onion changes its color or become translucent.
Now add green chilli paste,ginger garlic paste and cook till the raw smell of garlic goes away.
Then add besan,salt,red chilli powder,amchur powder and roast besan,stir ocassionally.besan masala is ready,add fresh coriander leaves and mix well,keep aside.
Make small portions of the dough and make small chapattis and stuff the besan masala and then with the help of rolling pin make parathas.





Now,in the heated tawa put the paratha and cook both sides and apply oil.cook paratha till golden brown from both sides.


Repeat the same process and make parathas from rest of the dough.
Serve hot with boondi Raita.


For boondi Raita:

Soak boondi in the warm water for 5-7mins.squeeze out extra water and keep aside the boondi
Now in a mixing bowl blend dahi and all ingredients except boondi,mix well.
Then add the sqweezed boondi and mix well.keep in the fridge and serve chill
