Stuffed gatta
Ingredients
For stuffed gatta
1cup bean
1tsp ajwain
Pinch of hing
1/2tsp baking soda
Salt to taste
2tbsp garlic paste
1tsp red chilli powder
1tbsp karuri method
1/2cup grated paneer
1tsp amchur
1tbsp oil
For the gravy
Salt to taste
1tbsp oil
1tsp Cumin seeds
Pinch of hing
2tbsp Curd
2 medium sized onion paste
2tbsp ginger garlic paste
2tsp red chilli powder
1tsp coriander powder
1tsp garam masala
1/4tsp haldi powder
Water as required(warm)
1tsp Kasuri methi
2 medium sized tomatoes finely chopped
Method
1.In a mixing bowl add bean,1tsp oil,ajwain,hing,salt,baking soda,garlic.knead a dough.cover and keep aside
2.In a pan heat oil and grated paneer,salt,red chilli powder,kasuri methi,amchur.mix well and cook for 2 mins and the stuffing is ready.
3.Divide the dough in small balls and with the help of rolling pin make chapati and stuff the paneer and roll it and seal the ends from both sides with the help of water.
4.In a steamer heat water and on the top keep all the stuffed gatta and steam for about 6-8mins or till done.when the gatta is steamed take it out from the steamer deep fry them and keep aside.stuffed gatta is ready.
5.Now heat oil in a Kaudai add cumin seeds,hing,ginger garlic paste and cook for a minute.
6.Then add onion paste and cook till the oil separates and the raw smell goes away
7.Now add the chopped tomatoes,salt,turmeric powder mix well and cook till the tomatoes becomes pulpy.
9.now add the beaten curd and mix well,and then add the fresh beaten malai or fresh cream and mix till the oil separates and cook for a min
10.then add garam masala,kasuri methi,stuffed gatta and cook for 2-3mins and then add 1/2 cup warm water to meet the right consistency and cook in a medium low flame for 4-5mins.
