Stuffed lauki

 

Ingredients

1medium sized lauki
1 cup tomato puree
1tsp green chillipaste
1 bay leaf
1/4cup paneer crumbled
2-3 boiled and mashed potato
Mustard seeds 1tsp
Amchur powder 1tsp
Black pepper powder 1tsp
Salt to taste
Red chilli powder 1tsp
Coriander powder 1tsp
Tumeric powder 1/4tsp
Garam masala 1tsp
Oil 1tbsp
Cumin seeds 1tsp
Fresh cream 2tbsp
Sugar 1/4tsp
Fresh coriander leaves

Method

1.Deseed, peel and cut into small portions of lauki,boil the lauki and keep aside.
2.Heat 1tsp oil add mustard seeds,when mustard seeds starts crackling add crumbled paneer and mashed potatoes and cook for a minute 
3.Then add salt to taste,black pepper powder,amchur powder.mix well and cook for 2 minutes.keep aside

4.In a kadai heat oil add cumin seeds when it starts to crackle add tomato puree and green chili paste and cook in a medium low flame for 5-7 mins or till oil seperates
5.Then add kaju paste and mix well,cook for another 2 min or till oil sperates,then add water and cook for a minute.

6.Then add salt,tumeric powder,red chilli powder and cook for a min.
7.Then add fresh cream and sugar and cook for another 2-3mins.
8.Now stuff the paneer mixture to the lauki pieces and add to the gravy.

9.Add garam masala mix well and cook for a minute.
10.transfer in the seeving bowl and garnish with fresh coriander leaves.
