Natural mango stuffed kulfi
For the outer covering :
2 medium sized ripe mango
For the kulfi filling
1/2 lt milk
Few saffron
Mango essence
Pista finely chopped
Kaju finely chopped
1/2tsp sugar
Yellow color (optional)
Method
1.wash the mangoes
2.discard the crown of the mango.using a sharp kneif remove the mango seed,make sure you dont remove too much of the mango's flesh along with the seed.and dont create a hole in the bottom of the mango,in trying to remove the seeds.3.stand the mango on the top of a glass and place the crown on it.and set the mango along with the glass in the freezer while we prepare kulfi filling.
For the kulfi stuffing
1.Heat oil in a medium low flame and keep on stirring ocassionally so that the milk doesn't stick to the bottom of the pan.the milk will start to froth or form a layer of cream/malai on top.
2.when we see the cream floating on the topthen with the help of spatula,gently move the cream layer towards the side of the pan and stick to it.keep on repeating the same process.4.the cream layer collected at the side of the pan,scrappe off the entire cream layer as well as dried milks solid and add to in the thickened milk.
5.stir gently and add in almonds and pista to it and mix well
6 add 2 drops of mango essence and gently mix.
8.keep aside and let it cool.
For Assembling
1.take the glass out of the freezer with the chilled mango and remove the crown.
2.fill un the kulfi stuffing into the mango almost till the top.put the crown back.
3.cover up the mango stufeed kulfi with the foil to avoid the formation of crytal ice and let the kulfi set for 4-5 hrs.4.After 4 hrs ,when the kulfi has gotten almost solid,gently peel the mango using a peeler.put the mango back in the freezer,with the top covered woth foil,let it set for atleast a couple of hrs more.
5.when you are ready to serve the dish,remove the glass from the freezer and cut the mango into pieces.Discard the crown.
6.your natural mango kulfi is ready to serve.
