Mango kalakand
Ingredients
1/4 cup Tragacanth gum(gund)
2 cup milk
2tbsp ghee
4-5tbsp sugar
Kesar few strands
Mango pulp from 1 ripe mango
Method
1.In a deep pan add ghee and roast the
Tragacanth gum(gund) when it becomes light and crispy then add milk to it.
2.stir continuously,then the Milk will turn to paneer.
3.in a low medium heat stir it periodically till the water burns off and only milk solid remains.
4.once the milk solid remains then cook till light brown in color and the ghee separates.
5.then add sugar and kesar and cook for 5 mins.
6.then add the mango puree and cook till the mango is mixed well with the kalakand and cooked.
7.then transfer it in the plate and cut as desired aur set in moulds.
8.your mango kalakand is ready to serve.
