Royal Gatta pulav


Ingredients

For Besan Gatta

1.5 cup besan
Pinch of hing
Haldi powder 1/4tsp
Red chilli powder 1 tsp
Salt to taste
Cumin(jeera) 1 tsp
Ginger garlic paste 2tsp
Yogurt 1/4 cup
Oil 5 tbsp
Baking soda 1 tsp
Kasuri methi 1 tbsp
Water,if needed to make a dough

For pulav

2.5 cup cooked basmati rice
Cumin seeds 2 tsp
Ghee 3 tbsp
Bay leaf 1
Dried red chill 3
Green chillies chopped 2
Red chilli powder 1/2 tsp
Green cardamoms(elaichi)
Black cardamoms(elaichi)
Cinnamom stick (dalchini) 1inch piece
Onion,sliced 1
Garam masala powder 1 tsp
Fresh coriander leaves chopped
Salt to taste.
Raisins(kissmish) for garnishing

Method

1.Take a large mixing bowl.add besan,hing,haldi powder,red chilli powder,cumin seeds,yogurt,oil,kasuri methi,baking soda and mix well.
2.add ginger garlic paste and knead into a stiff dough.
 3.divide the dough and shape then in long cylindrical roll.
 4.boil enough water in a vessel.Add rolls to the boiling water and boil for 10-15 mins.Remove from heat.
5.take out the rolls from the water and cut each roll into pieces.Gattas are ready.
 6.Heat oil in a kadai.add onions and saute till they turn golden brown.
 7.drain on an absorbent paper and keep aside.
 8.Heat ghee in a kadai.Add cumin seeds(jeera) and splutter for few secs.

9.Now add green cardamom(elaichi),black cardamom,cinnamon sticks(dalchini),red chillies,bay leaf(tej patta),and saute for 30 secs.

10.add green chillies and saute for few secs

 11.add cooked gattas and saute them for 3-4mins

 12.add fried onions to it and mix well.
 13.now add cooked rice,chilli powder tumeric powder,garam masala,and salt,and mix well.
 14.cook on a medium heat for 3-4mins.stir occasionally.Remove from heat.
15.garish with raisins,coriander and serve with plain yogurt or raita.
